Family and Consumer Science

The Family and Consumer Science program reflects the New York State Learning Standards and exposes the student to a variety of experiences in the culinary arts. It allows the student to focus on skills necessary to expand his/her interests, pursue advanced study and/or acquire the skills for entry-level related careers.

Middle School Course Offerings:

6th Grade Family and Consumer Science (fsc6):  .25 Unit The main focus of this course is to give students experience in all areas of Home & Careers.  In the food science unit students will practice skills needed for proper nutrition, prepare snack foods using the microwave, and follow recipe directions.  Safety skills will be implemented in the cooking labs, as well as in the family environment. Throughout the home safety unit the students will explore a house that is unsafe.  They will realize that a safe house needs a fire extinguisher, smoke detectors and other safety precautions.  In the textile unit, they will learn how to operate a sewing machine, sewing equipment and create a machine-sewing project.  Organizational skills and modern technology will be used to meet the state standards.  Grade is determined by:  notebook, class work, test/quizzes, cooking labs and projects.

8th Grade Family and Consumer Science (fsc8):  .5 Unit The main focus of this course is to give students experience in all areas of Home & Careers.  The food science unit will consist of basic nutrition and nutrition labeling.  Setting the table and table manners will be stressed throughout the foods unit.  Manners will be addressed for everyday usage including proper etiquette for the cell phone, internet safety as well as social media. In the textile unit the students will review  basic sewing equipment, sewing safety, laundry, and complete a sewing project by hand. The interior design unit will allow students to decorate a house using templates, the color wheel and all aspects of design layout. Throughout the consumer unit the students will become lifelong learners as they follow directions, set goals, budget, practice teamwork and organizational skills.  Students will explore careers on designated internet sites, learn interviewing skills, and complete a professional resume on the computer.  Organizational skills and modern technology will be used to meet the state standards.  Grade is determined by:  notebook, class work, test/quizzes, cooking labs and projects.

High School Course Offerings:

INTRODUCTION TO CULINARY ARTS Full Year, 1 credit (L907) *CTE Pathway Course Introduction to Culinary Arts is a fast moving basic preparation course designed for those students who are interested in developing skills either for personal enrichment or towards future career paths. This course will help the student develop an understanding of sound nutritional concepts through many hands-on experiences related to food and nutrition.

GLOBAL & GOURMET FOODS Full Year, 1 credit (L909) *CTE Pathway Course This course introduces students to the ways in which the culture and traditions of regions and countries influence food choices. Students will identify and prepare foods from various regions and countries to compare cuisines, ingredients and preferred cooking methods. Students will also examine the issues and conditions which affect the availability and quality of food in the global market. Current issues related to global nutrition from production through consumption will be explored. Students will have the opportunity to examine the wide variety of career paths in the field and identify knowledge and skills necessary for success. Prerequisite: Successful completion of Introduction to Culinary Arts

ADVANCED CULINARY ARTS Full Year, 1 credit (L911) *CTE Pathway Course This project-based course will allow students to experience many aspects of artistic and decorative food preparation. We will include cookie and cake decorating, chocolate molding, hosting catered luncheons and extreme food preparation. Students will be encouraged to combine food preparation skills and creative expression for both personal satisfaction and future career options. Prerequisite: Successful completion of Global & Gourmet Foods Students will be charged tuition for this course if they choose to earn college credit from Suffolk CCC. Credit in this course is predicated upon payment of tuition. Students are responsible for requesting official transcripts from Suffolk CCC to be sent to post-secondary institutions for admission and/or credit. This course will receive honors course weighting.
